Was thrilled to realize I’d already been using some of these ideas in my cooking. Easy to understand and I have the charts saved on Pinterest to refer back. Loved how the author focused on the science of cooking and how to thoughtfully approach recipes, meal planning, and choosing quality ingredients. Thankful I’m vegan because having to learn to cook so many types and cuts of meat seems very overwhelming, haha! I’ll focus on applying these ideas to my beloved veggies, fruits, grains, and baked goods.
